If you don’t know who Jack Monroe is then I would suggest looking her up. I just ordered her cookbook called Cooking on a Bootstrap, although it has not arrived yet. The title is really self explanatory. Right now I am cooking on less than a bootstrap…maybe cooking on ducktape. It is currently a lovely five degrees outside.
I am unemployed, expecting, and just ready for next (Now please no judgements here…I have a significant other with a job, I have corporate experience, I am not collecting….we just aren’t at that Bill Gates level just yet…not that any of that should matter). We are on that early Jack Monroe level. Again, look her up! I was hungry today and decided to create my own curry with our BIG budget. It came out more of a curry chili thing, but I think its delicious. You can find most of these ingredients at the dollar store, which is even better. Feel free to substitute everything and anything. Also…please let me know what you think if you dare to try this THING 😄.
Here it is:
1 can fire roasted diced tomatoes
1 can white cannellini beans
1 big handful of chopped frozen broccoli
1 big handful of frozen corn
1.5 tablespoons of vegetable oil
2 caps cider vinegar
2 tablespoons of curry powder
1 teaspoon of cumin
1 tablespoon of lemon juice
1.2 teaspoon of sazon or mixed seasoning (cilantro, etc.)
1 clove of roughly chopped garlic
I really just dumped it all in the pot at once.
Simmer (moderately low heat) in a pot for 20 mins or to taste
Serve with white rice (I used the tem minute microwave rice that was already in my pantry).
